- Prepare 3 of Egg Whites.
- It's 3 tbsp of Cold Water.
- Prepare 1 cup of Castor Sugar.
- It's 1 tsp of Vinegar.
- Prepare 1 tsp of Vanilla Essence.
- You need 3 tsp of Cornflour.

- I am sorry to put this in the "Austrailian Recipes" section but there is no "New Zealand Recipes" section, this is a NEW ZEALAND recipe! If an aussie tells you otherwise remeber they also stole Phar Lap, Split Enz, Evermore, Russell Crowe, Dragon, Crowded House and the Electric Fence from us kiwis =).
- beat egg whites until stiff, add cold water and beat again.
- add castor sugar very gradually while beating.
- slow beater and add vinegar, vanilla and cornflour.
- place on greased paper on a greased tray.
- bake at 150C (300F) fo 45 minutes.
- turn off oven and leave to cool in the oven.
- once cool, smoother with whipped cream and sliced fresh fruit (usually strawberrys or kiwifuit).
- serve after a BBQ on Christmas Day =).
