Lamingtons. A lamington is an Australian cake made from squares of butter cake or sponge cake coated in an outer layer of chocolate sauce and rolled in desiccated coconut. Lamingtons are a vanilla sponge dipped in chocolate then coated with coconut. A soft buttery sponge cake coated all over with chocolate icing and coconut.

Ingredients of Lamingtons
- Prepare of Sponge Ingredients.
- Prepare 2/3 cup (100 g) of plain flour.
- You need 1/4 teaspoon of baking powder.
- Prepare 50 g of unsalted butter.
- You need 4 of eggs.
- You need 1/2 cup (110 g) of caster sugar.
- Prepare of Chocolate Icing Ingredients.
- You need 3 cups (480 g) of icing sugar.
- It's 3/4 cup (75 g) of cocoa powder.
- You need 1/3 cup (80 ml) of boiling water.
- You need 75 g of butter.
- It's of Decoration Ingredient.
- It's 200 g of shredded coconut, to coat.
- You need of Black currant jam, between sponges.

Lamingtons step by step
- Preheat oven to 180°C.
- Place the eggs and sugar in an electric mixer and whisk on high speed for 10–12 minutes or until pale, thick and tripled in volume.
- In the meanwhile, put the flour and baking powder in a bowl together and then sift three times to make sure they are mixed through and set aside. Also melt the butter.
- Sift ½ of flour mixture over the egg mixture and gently fold through using a large metal spoon. Repeat with the remaining flour.
- Add melted butter and fold through.
- Pour the mixture into two shallow square tins lined with non-stick baking paper and bake for 16–18 minutes or until sponges are springy to the touch and come away from the sides of the tins..
- Remove from the tins and cool completely on wire racks.
- Once cooled, spread blackcurrant jam on one sponge and place second on top. Then cut the sponges into roughly 6cm squares.
- Make the icing by placing icing sugar, cocoa powder, water and (melted( butter in a large bowl and whisk to combine. And place the shredded coconut on a plate.
- Using a fork, dip 1 lamington in the icing and roll in the shredded coconut. Place on a wire rack or tray to set.
Any firm type of plain cake can be used: butter cake, pound cake. Lamingtons, the Australian treat, might look tricky, but they're fun and easy to make.
